Description

Begin with a guided walk through a neighborhood food market, where you will learn about seasonal Chinese vegetables, mushrooms, tofu products, herbs, spices, sauces, and other ingredients commonly used in plant-based Chinese cooking. Together with your local host, select fresh ingredients for the meal and gain practical tips for finding vegan food while traveling in China. After visiting the market, continue to the cooking space and prepare a fully vegan Chinese meal together. Each session features a rotating menu of 2 to 3 dishes, selected by the host according to the season, ingredient availability, and the freshest produce found at the market. The menu will normally include at least one hands-on Chinese staple, such as vegan dumplings, steamed bao buns, or wontons. Other possible dishes include vegan hulatang, a warming and aromatic peppery soup, and vegan Beijing roast duck-style pancakes served with vegetables and sauce. The dishes listed are examples of the rotating menu and will not all be prepared during the same session. The exact menu may vary, but every class remains fully vegan and offers a similar amount of food and hands-on cooking time. Guests will learn practical techniques such as preparing plant-based fillings, folding dumplings or wontons, shaping bao, balancing Chinese seasonings, and making traditional-style sauces. At the end of the class, sit down together to enjoy the meal and exchange stories about Beijing life, Chinese food traditions, and vegan travel in China.
